Gluten is a protein naturally found in grains such as Wheat, Rye, Barley & most Oats (because of cross contamination). Hidden sources of Gluten can not only be found in food, but can also be found in beverages, alcohol, vitamins, medications & make-up.
“Gluten Free” is a lifestyle completely free of ingredients derived from gluten-containing foods/products.
Why do people eat Gluten Free?
People with Celiac disease cannot consume food containing any amount of Gluten. There are also countless others who are suffering from less severe forms of gluten intolerances and sensitivities that can benefit from a Gluten Free lifestyle. Then there are those that just choose to remove Gluten from their diet for various reasons.
What is Celiac Disease?
One in every 132 people suffer from this serious autoimmune disease that damages the small intestines and interferes with the absorption of nutrients from food. It is triggered by the consumption of the protein Gluten, which in a Celiac, can cause severe damage to the small intestine.
By removing Gluten from their diet completely, someone with Celiac Disease can begin to heal, and with time begin absorbing nutrients again.
What does Casein-Free mean?
Casein is a protein that is found in milk/dairy and milk/dairy products. Casein-free is similar to dairy-free. Sometimes people with celiac disease have an allergy to Casein also and that is why you will see a lot of Gluten Free products that are Casein Free/Dairy Free as well.
What is the shelf life of your products?
We recommend that all our baked goods are eaten or frozen within a day or two of arrival.
Toasting or letting them thaw on the counter are good options when taking them out of the freezer to refresh them. All of our products freeze extremely well and can be kept in your freezer for a few months. Simply remove the items from your freezer and allow them to thaw on your counter (which doesn’t take long) and enjoy!
